The King's Fruit Salad

Almost any combination of fruit mixed into a creamy sauce makes an excellent salad year 'round.  But this week, as spring emerges from beneath the dwindling piles of snow, pull out all the stops with the selection of premium fruit and berries below.  Some of these ingredients may be on sale now at your local grocery store, but even if they aren't, splurge a bit-- it'll be worth it for this vitamin-packed, spring-infused feast.  Though I am an advocate and frequent consumer of frozen and canned produce, go fresh for this recipe. 

Bring this salad to serve as a potluck side dish, enjoy it as a light dessert, or start your day right with a small plate of salad and a warm whole grain muffin.


1 Champagne mango
1/3 Granny Smith apple
2 c green grapes
1/2 fresh pineapple
1 can mandarin oranges
1 pint strawberries
2 bananas
2 c unsweetened apple sauce


Chop all fruit into small pieces and mix lightly with apple sauce.  Serve immediately.
